Characteristics
Color
It gives a sharp red color in the scope of pH2.0-7.0, and is alkaline and orange.
It does not discolor due to protein (milk protein, etc.).
It is very stable against light, and can be used when heated and used in a short time at 75°C or below.
Solubility
It is dispersed in water and fats and oils and dissolved in dilute alkaline carbonate, ethanol, and propylene glycol.
Flavor
It is tasteless, odourless, and has no effect on food that is colored.
Influence of metal ions
The effect of metal ions is hardly affected. However, in Fe2+, Fe3+, the color tone tends to be somewhat black, so consideration should be given to the iron content.
Effects of drugs
When alkaline (caustic soda, ammonia, etc.), the color rapidly changes from red to orange. In acidity (acetic acid, tartaric acid, citric acid, ascorbic acid) discoloration does not occur.
